german potato salad

2 lbs
small waxy potatoes, scrubbed and halved
1/4 cup
olive oil
medium white onion, chopped
salt & fresh ground pepper
1/4 cup
apple cider vinegar
1/2 cup
green onion, sliced
2 tbsp
North Shore Living Herbs® Dill, chopped
1 tsp
caraway seeds, toasted
Time to cook 30 minutes, serves 6
The perfect combination of onion, dill, and vinegar flavor. This potato salad is light and flavorful, excellent for a warm summer day.

Cover potatoes with cold salted water, bring to a boil, and cook until tender; drain and transfer to a large bowl. While you are cooking your potatoes, heat oil in a medium skillet over medium-high heat. Add onion and season with salt and pepper. Cook, stirring often until soft, about 5 minutes. Remove from heat and mix in vinegar. Add to potatoes along with green onions, dill, and toasted caraway seed and toss, crushing potatoes slightly. Taste your german potato salad and season with salt and pepper if necessary. Enjoy!

I love potatoes, so of course I’ll love this recipe with fresh living herbs!
